But are all these anime dubbed in Italian? I'm happy even if they're in English. If not, it doesn't matter (not to brag), I'm very fast at reading, especially subtitles.

You would have to check them individually (on Crunchyroll). I can check a few for you (this is for Italian):
Hell's Paradise - has both (dub + subtitles)
World Trigger - only subtitles
Kaiju No. 8 - has both
Mob Psycho 100 - has both
One-Punch Man - has both
Chainsaw Man - has both
Tokyo Revengers - has both
Keep in mind I don't speak Italian, so I have no idea if the dub/subs are actually good.
Pirate sites do seem to have Italian subtitles for some shows, but probably not dubs. They might be poor quality though.
For your question about "The Summer Hikaru Died": It's currently airing (not finished), has good reviews, I haven't seen it yet though.
